All great sandwich experiences start with slices of quality bread. A versatile brioche that can be used for endless pastry applications. Both can begin with the same recipe! Ashley's here to share all her tricks. Watch her demonstrate one master enriched bread dough from start to finish. You will learn different mixing and shaping methods that yield sourdough white bread, feathery milk bread loaves, sweet and savory bun varieties. Come hungry and get ready to laugh; part of the learning is through tasting and Ashley plans to entertain you with stories from her adventures in baking.

BIO: Ashley Capps has been learning, working, and teaching in kitchens for nearly 24 years. She feels at home in small, independent restaurants like her time spent at Five & Ten in Athens, Rezaz, and Rhubarb in Asheville. She will fondly reminisce of her brief time spent in bigger cities, working and learning in larger restaurants like Eleven Madison Park in NYC. Ashley worked fulltime in kitchens and wood-fired bakeries like Farm & Sparrow, while teaching as an adjunct instructor at ABTech Community College. Teaching the pastry arts curriculum to students filled her with joy and simultaneously helped her continue to grow as a pastry chef. She fell in love making retro and heirloom pies (and lots of white bread) at Buxton Hall Barbecue, bashfully receiving a nomination for James Beard Semifinalist Outstanding Pastry Chef in 2019. She and her partner, Travis opened their first business together in 2020. 'New Stock' was their in-home supper club that quickly became a curated dinner delivery model in response to COVID. After a couple of years of deliveries and pickup spots around Asheville, New Stock gleefully became a brick and mortar in 2022 in the River Arts District. Part curated retail, part lunch spot, all heart. The storefront was flooded recently from hurricane Helene. New Stock continues to live on, as the business is adaptable and creative with two people that are passionate and love to cook. Ashley and Travis are currently vending at farmer's markets (and even out of their production kitchen in Woodfin). Some plans are in motion for the future with New Stock. They also have a little two-year-old appropriately named Wylie, a dog named Charlie that thinks he's their actual first kid, and a flock of chickens that have managed to keep us stocked with eggs for the last five years.
